Early in the 20th century, the Mexican Revolution rallied men and women across the nation to fight against years of tyranny that ravaged not only the land but also the spirit of the Mexican people. Women, known as “Soldaderas” or “Adelitas,” played a crucial role in the Mexican Revolution, fighting in the battlefield alongside revolutionaries such as Pancho Villa and Emiliano Zapata, while also caring for the men by washing their clothes, cooking for, and nursing them. Our great-grandmother, Maria de la Luz, was an Adelita–a cook in the ranks of General Pancho Villa. Her love of food and cooking was passed down to our grandmother Rosalia, who for 36 years worked as a cook at Las Delicias Restaurant in Mexico City. Naturally, our mother Ana, AKA Jefa, also became passionate about food and continued to expand her cuisine style once she married and moved to the state of Jalisco. This is our legacy.
El Sombrero’s flavors have a long history in the making. With her grandmother’s and mother’s recipes, and seeking better opportunities, Jefa migrated to the United States where she continued to cook and instinctively transmitted her passion for food and cooking to her children. Now, with several brothers and sisters in the culinary industry, we bring to you authentic Mexican cuisine with a contemporary twist. We hope to please you with our freshly made tortillas, deliciously marinated meats, aguas frescas, and mouth watering Mexican desserts.
